BASIC PRINCIPLES: To develop traditional way a “Black Listán” Brut, using the Champanoise method.
WINEMAKING METHOD: Following the strictest traditional method the vintage cuvee is performed for mid-July. Preparation of the “Liqueur de Tirage” on November and second fermentation at controlled temperature during the month of December. Subsequent aging on lees for 9 months. Hand disgorging is carried out according to the market demand.
WINE-TASTING CHARACTERISTICS: Salmon pale, clean and bright. Mineral aroma with notes of bakery. Floral. Light and cheerful, well balanced and fresh.
