Variety of grapes: Listán Negro, Negramoll, Tintilla and Listán Blanco.
Production: Wine elaborated with the varieties canary Listán Negro, Negramoll, Tintilla and Listán Blanco from their own Vineyards located in the municipalities of Tacoronte and el Sauzal, within the Denomination of Origin Tacoronte Acentejo, in the north of the island of Tenerife.
The harvest is done by hand, variety by variety and plot by plot, when they have reached the optimum point of maturity. We performed a careful manual selection of the grapes and with separately, both for varieties such as farms.
The grapes undergo a de-stemming and crushing and performs a pre-fermentation cold maceration that lasts between 2 and 5 days, at temperatures below 10ºC. Then starts the alcoholic fermentation in stainless steel tanks. The vatting lasts between 7 and 15 days. And during this time the fermentation temperature is controlled.
Subsequently the wine made the malolactic fermentation, with an ageing on lees. Once these processes have finished the blend is made of different wines and are subject to a minimum of four months in new oak barrels central european and american.
The wine is not stabilized by cold, so that may present some abrupt, without compromising its quality.
Degree of alcohol: 13,4% vol.
Total acidity: 5,5 g/l in tartaric acid.
Tasting note: Wine of medium – high layer, garnet color. In nose presents spicy notes, smoky and chocolate, with a presence of ripe fruit and varietal aromas. On the palate it is ample, well balanced, with an aftertaste aroma very pleasant and long aftertaste.
Food pairing: a wine suitable to combine with different dishes of cuisine, from grilled fish, especially fatty as the tuna or fish in sauces, to meats, passing through pastas and rice dishes.
